So this last weekend was incredible. 70-75F (21-24C). Sunny, no rain, gorgeous. The only downside was that my attic apartment doesn’t take so well to the heat - oof. So as most of you know me, I had a mobile AC unit delivered on Saturday so now my bedroom will stay nice and cool all summer long. Yes, I am weak, and I own it. But I met my neighbor in the process, so that was a success.

A good group of us also went to the beach on Sunday! A Sunday picnic with wine, snacks, and a whole lotta sunscreen. The beach, Zandvoort, is only 45 minutes from my apartment by train. It’s so close, I may actually go often enough to get a tan this year! (madness, I know).

The past few weeks have been a lot of fun! Since last I blogged, I went to Brugge, had a relaxing weekend in, and did a number of events with coworkers and friends in Amsterdam (from more canal cruises to a picnic at the park).

So the trip to Brugges was a semi-last minute planned journey with a couple of coworkers, but turned out to be a fantastic break from Amsterdam and work. Turns out you can get to a lot of places by train within 4 hours, Brugges included!

Brugges is a relatively small town in Belgium on the West coast of the country. Even while staying on the West side of the city, everything was within a 15-20 minute walk. We got into town on Friday evening and grabbed dinner at this fantastic little place called The Olive Tree. Fantastic seafood and Mediterranean dishes. Saturday we found out that right outside our hotel was this massive market full of food stands, clothes, accessories, etc. Of course, we did a canal boat cruise, the third in 2 weeks, and then walked around and hit up the breweries! We went to Huisbrouwerij De Halve Maan, which is one of the oldest breweries in Brugges (and possibly Belgium) and we did a beer tour! Unfortunately, they were not actively brewing, but it was interesting to learn that due to the historic building they are located in, they actually had to remove the roof in ONE PIECE to load in newer equipment as to not destroy it!

Then we just decided to grab a spot in the sun at a restaurant and relax. More amazing seafood of course. On Sunday, we climbed the Belfort Tower and stopped in a random Salvatore Dali art museum!

The next weekend I need a recoup and relax weekend. So of course I baked (not pictured). I made these amazing raspberry lemon sugar cookies. I’ll have to make them again because they were incredible and totally photo worthy! Oh, and I became a plant mom! I’m going to have to try and keep these babies alive. My coworker/friend is teaching me that they do tell you when they need water, but they won’t tell you if they’re drowning.

So, water less, pay attention, and keep them alive.

Work of course has been crazy with an incredibly tight timeline to get this project built. Seems almost like I’m losing track of time (hence me forgetting that it’s been THREE WEEKS since I posted last.

Last weekend we took a coworkers friend who was in town out in Amsterdam for a fun night out, leaving me to need a solo relaxing Saturday #introvertshaveneedstoo. Sunday I grabbed brunch with a friend, walked around the boutiques of Amsterdam and had a mini picnic in a local park!

The weather here is starting to turn gorgeous *fingers crossed *. It’s supposed to stay in the 70s until next Thursday! I will say though, I live in an attic with no air conditioning, so I’m going to learn what my summer life will be like shortly - and probably need to order another fan, or five!

My new motto. Saying yes when being invited out or seeing something that looks interesting to do. I tried it in Nevada when I first moved out there, but let me tell you. There’s a lot more to say yes to in Amsterdam when everyone you know is new to the area!
